What's better than a good old American apple pie? Right, eight of them!!
A friend of mine recently celebrated her birthday, which I've missed due to the darn flu. However, when I was putting the finishing touches on her present yesterday, I felt like something was missing. I wanted something where I could put a candle on top and didn't feel like baking up a batch of muffins. So I thought why not take a basic apple pie and downsize it to the size of a cupcake?!
I have to say they turned out pretty good!
If you want to try these little pies yourself just quickly whip up the dough (find the recipe here) or simply cheat (like I did) and buy an already made one from the store.
Cut the dough into circles, using a big tea cup and put it carefully into a muffin form. Fill it with your sliced apples (flavored with a bit of sugar and cinnamon) and place some stripes of the leftover dough as a grid on top.
